Fresh, hand crafted artisan cheeses are handcrafted in small batches using live cultured macadamia, sunflower, or sesame seed cream (depending upon the type of cheese that's being made). Many fresh cheeses are made to order for takeaway, delivery, or purchase at market, though some (such as the sunflower seed mozzarella) are available only as part of our dining menu (on site or special events) or featured as an ingredient in certain menu items (such as Ahimsa Living Torta Rustica & raw quiches). Additionally, some variations (such as the living nut-encrusted Yule ball) are also seasonal––unless requested specifically as part of a custom order.
